Greetings! I hope that you all are doing your best to keep cool during these incredibly hot dog days of summer. I cannot recall a summer in recent years that has been quite as hot as this one. With heat index readings in my area reaching 110 degrees, firing up the oven and making a big roast dinner is not in order. What is in order though is my mom’s old standby for days like this and she always called it cold platter. I will show you how I make mine and hopefully you can come up with somethings that your family will love that you can include on yours. Tuna, hard cooked eggs, fresh garden veggies, olives, pickles, cheeses and meats are some things I always choose for ours. What does your family love that you have in the house right now? Take a look in your pantry, fridge and garden and I’ll bet you can whip up a platter that will satisfy even the meat and potatoes crowd without making too much work for these hot, hot days.
